| Method |
- take 3 red or orange Peppers and cut then in half
- put the Peppers, skin side up, on a grill tray and pop under the grill
- remove from the grill when the skins are black and blistered and the flesh soft
- peel the Peppers of the blackened skins (don't worry if you can't peel all the pepper)
- Fry an Onion, red Onion is nice, and a clove of garlic
- When soft add the chopped Peppers, add some origano or majorum if you have any, prefrably from your wonderful herb garden
- Meanwhile, boil a mug or two of pasta, that spiral type is nice
- When the pasta is cooked drain it and serve portions on a plate, add the pepper mix and if you want top with grated cheese, chedder or that parmesan if you like it
- serve with a nice green salad and a glass of red wine if you have friends round and want a bit of a party atmosphere
